We present a home-style take on a drink from the seasonal drinks list. This is a party-sized pre-mixed that's loaded with the flavours associated with Christmas time, rendering it ideal for your holiday party. Any leftover cordial you can use for morning drinks, desserts, or for additional servings of the drink.

Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Put all the ingredients into a saucepan, bring to a light boil, stirring to dissolve. Next, turn off the heat and let it to cool fully. Pour into an sealable bottle, seal and store chilled, it will last for about one month.
To make Batch Mix: Mix the specified spirits and syrup in a sizeable container, allow it to infuse for one hour, then filter it , ideally through a fine cloth, so it's completely strained.
For serving: Measure 85ml of the batch mix to a mixing glass packed with ice, gently stirring carefully for a minute to chill. Strain into a cold coupe glass or equivalent, garnish with some cranberries adding the final touch using a light spray with the mandarin essence above the glass.
